Fusing the decadent flavours of Italian cuisine and the freshness from Japanese seasonal produce, Chef Edwin helms Hokkaido Table, bringing over three decades of experience to deliver a curated dining experience.

A distinguished maestro in the craft of Japanese cuisine, Chef Edwin has gleaned inspiration from his culinary adventures in Singapore, Switzerland and back home in Kuala Lumpur, leading top fine dining establishments during his tenure. Beyond his passion for food, his expertise lies in creating well-thought-out Japanese dishes, adorned with unique fusion flavours to complement. Chef Edwin’s inspiration stems from his knowledge of fresh produce, seafood and sushi ingredients, from their flavour profiles to seasonality.
